Chapman's Sustainability Policy
Chapman University is committed to a campus culture that promotes a sustainable future. This commitment is instrumental to Chapman's mission to educate ethical and informed global citizens. As such, it calls upon all constituencies of the University to carefully evaluate short- and long-term social, economic, and environmental impacts of decisions before acting. The University demonstrates this commitment through sustainable practices in strategic planning and ongoing operations as well as sustainability-focused educational programs, research, and community engagement.

Meet the Team
Jenny Kaufman
Energy Conservation & Sustainability Manager Jenny is from Sugar Land, TX and graduated from Texas A&M University with a B.S. in Bioenvironmental Sciences in 2018. She is passionate about providing education on sustainability in order to make sustainable living accessible to everyone, whether through composting, sustainable purchasing, or conserving water at home. Since moving to California, she has grown to love beach volleyball, rollerblading, and taking her dog to the beach, and she is working on her bread baking craft to perfect the sourdough loaf.
Kelly Taylor
Graduate Assistant Outreach & Engagement Coordinator Kelly Taylor is from Fort Lauderdale, Florida, and is a graduate student in the War, Diplomacy, and Society Program. She graduated with a BA in History and a BFA in Creative Writing from Chapman University in May 2024. Kelly loves brainstorming creative outlets for sustainability that appeal to students of all passions. Outside of work and school, she enjoys reading used books, going for hikes, and researching new recipes to spruce up refrigerator leftovers.
Marc Gamayo
Sustainability Student Assistant Marc is from Oʻahu, Hawaiʻi and is a current senior studying Business Administration with an emphasis in Marketing and a minor in Analytics. He is interested in sustainable living, education, and implementing sustainable initiatives in his communities. Back home, Marc enjoys relaxing at the beach, hiking, and going around the island. In California, he loves going to concerts, thrifting, and finding new foods to try.
Abigail Halling
Sustainability Student Assistant Abby is from Torrance, California, and is a current junior majoring in Sociology with a minor in Anthropology. She is interested in sustainability as it relates to social stratification and environmental justice. She has a passion for gardening and animals, and is currently working on turning her backyard into a sustainable veggie garden. When she's not planting seeds she loves crocheting, going on hikes, and exploring new places with her friends.
Abby Guzman
Sustainability Student Assistant Abby is from Port Chester, New York and currently goes to Chapman University as an Environmental Science and Policy major with a minor in Integrated Educational Studies. Her interests involve environmental justice advocacy through accessible education, along with promoting the importance of green spaces in lower-income communities. When she's not working or at school she enjoys going to concerts, facetiming her two cats, trying out new coffee spots, and decorating and writing letters back home!
Gracie-Anne Fraunfelder
Sustainability Student Assistant Gracie-Anne is a senior from Columbia, Missouri. She is majoring in Business Administration with a minor in Environmental Studies. Gracie-Anne is passionate about sustainable food practices. She believes that the food supply chain, from farm to fork, should be streamlined to minimize unnecessary steps. By reducing complexity, we not only alleviate the environmental impact but also strengthen the connection between consumers and the natural environment that nourishes them. Since coming to Chapman, Gracie-Anne enjoys cooking, hiking, trying the newest coffee shops and diving on Chapman’s Swim and Dive team.
Dempsey
Office of Sustainability Mascot Dempsey loves peanut butter, playing frisbee, and napping on couches. She is often present at events the Office of Sustainability hosts on campus, so make sure to stop by to give her a pet.
